BROCCOLI AND CAULIFLOWER AU
GRATIN
 
1 head broccoli
1 head cauliflower
1 oz. butter
1 oz. flour
1/2 lb. cheddar cheese, grated
1/2 lb. Swiss cheese, grated
1 c. milk
1/2 c. bread crumbs, dry
Seasonings

Trim and cut the cauliflower and broccoli into small flowerettes. Blanch the vegetables in boiling water. DO NOT OVERCOOK. In a small saucepan melt the butter and add flour. Mix well until paste (or roux) is formed. Add the milk and cheeses and cook over low heat, stirring constantly. Sauce should become thick.

Place vegetables in a suitable casserole dish and cover with cheese sauce. Top the sauce with the bread crumbs and sprinkle with your favorite "seasoned-salt" or just salt and pepper. Bake in an oven at 375 degrees, uncovered until hot and top is golden brown. Serves; 6. (Prep and Cooking Time: 30 minutes)
