BANANA NUT MUFFINS 
1 c. all-purpose flour
1 1/2 c. quick oats, uncooked
1/2 c. granulated sugar
2 tsp. baking powder
1/2 tsp. cinnamon
1 egg, slightly beaten
1 (med. size) mashed banana
3/4 c. milk
1/3 c. vegetable oil

In large bowl, stir together dry ingredients; set aside. In small bowl, mix egg, banana, milk and oil. Add liquid mixture all at once to dry ingredients, stirring just until moistened. Spoon batter into greased muffin cups. About 2/3 full. Bake in a preheated 375 degree oven for 15 to 18 minutes.
