ZUCCHINI MOZZARELLA 
1 lg. zucchini, sliced (1/4-3/4" thick)
1 (30 oz.) jar spaghetti sauce, thick & chunky style
1 sm. onion, diced or sliced
1/2 tsp. salt
1/4 tsp. pepper
1 c. sliced mushrooms
1 c. grated mozzarella cheese

Prepare in 11 x 14 inch baking dish. Pour in 1/4 jar of spaghetti sauce, spread to cover bottom of dish. Slice and layer in 1/2 zucchini, onion, mushrooms, salt and pepper. Pour in remaining spaghetti and repeat layering. Cover dish with plastic wrap and microwave for 10 minutes on high. Turn dish in microwave and cook for another 8-10 minutes until tender. Rest covered for 3 minutes. Sprinkle with mozzarella cheese. Serves 4-6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
