ONION & MINT OMELETTE | |
1 tbsp. olive oil 1 tbsp. butter 1 onion, very finely sliced 4 eggs salt and pepper, to taste 1/2 bunch of mint leaves, finely chopped Heat the oil and butter in a large pan and cook the onion slowly until golden and sweet. Crack the eggs in a bowl and beat lightly. Tip the pan and swirl gently to cover the base of the pan and help it set. When the omelette is all but set sprinkle over the mint seasoning and flash under a hot grill or broiler to set completely. Remove from pan and serve. Note: You can also serve with a light cheese.
