BEEF STROGANOFF 
1 1/2 lbs. sirloin steak
Flour
1 1/2 tsp. salt
1/2 tsp. pepper
2 tbsp. onion, finely chopped
1/2 lb. mushrooms, chopped
1 clove garlic, crushed
6 tbsp. butter
1 can beef broth
1 pt. sour cream
1 tsp. paprika
1 tbsp. Worcestershire
2 or 3 tbsp. catsup

Cut steak into strips and dredge with flour. Season with 1 teaspoon salt and 1/4 teaspoon pepper. Saute onions, mushrooms and garlic in butter in a skillet. Add steak and cook over high heat for 3 minutes, stirring constantly. Remove all from skillet.

Blend 2 tablespoons flour and 2 tablespoons drippings in skillet. Add consomme and catsup and cook, stirring until smooth and thickened. Stir in sour cream and remaining salt and pepper and place over low heat. Add paprika, Worcestershire sauce, beef and vegetables and heat through. Serve over noodles. Serves 4.
