PEANUT BUTTER CUP COOKIES 
1 c. shortening
1 c. sugar
1 c. brown sugar
1 c. peanut butter
2 eggs
1 tsp. vanilla
2 1/2 c. flour
1/4 tsp. baking soda
1 bag peanut butter miniature cups

Cream shortening, sugars, and peanut butter. Beat well vanilla and eggs. Sift flour, salt, baking soda. Add all mixtures together. Roll into small balls and place in miniature muffin pans. Bake at 375 degrees for 12-15 minutes. Remove from oven and immediately place a miniature peanut butter cup in the center of the muffin and press. Let cool a few minutes before removing from pan. Makes 40 or more.
