WHIPPED BANANA PUDDING (Sugar
Free)
 
1/2 tsp. unflavored gelatin, softened in water
1 lg. ripe banana
1 packet Equal
1/2 tsp. grated lemon rind (optional)
8 drops yellow food coloring
2 c. plain low-fat yogurt

Blend all ingredients except yogurt in a blender until smooth. Fold in the yogurt. Pour into individual sherbet glasses. Chill well. Makers 8 servings. Calories: 52 per serving.
