ROAST LEG OF LAMB HERBAL | |
1 leg of lamb 1/2 c. Dijon mustard 2 tbsp. soy sauce 1 tsp. ground rosemary, crushed 1 tsp. thyme 1 clove garlic, mashed 1/4 tsp. ginger 2 tbsp. olive oil Ask butcher to remove bone from let and attach together with skewers or can be baked with bone. Blend all ingredients together EXCEPT olive oil. Then add olive oil by driblets. Use roasting pan with a rack to bake lamb. Place lamb on rack. Coat on all sides with seasoned mixture. Let set all day on counter. Do not refrigerate. Bake at 350 degrees for 1 hour and 15 minutes. Meat will be medium rare. Continue to bake to the way you like it. Serve with white wine, green vegetables and mint jelly. |
