2 c. milk
4 eggs
1/2 c. sugar
1/2 c. all purpose flour
1/4 c. butter
1 tsp. vanilla
1/4 tsp. salt
1 c. flaked coconut

In a blender combine all ingredients except coconut. Blend for 10 to 15 seconds then stir in coconut. Pour into a greased 9" pie pan. Bake at 350 degrees for 40 minutes or until knife inserted halfway into center comes out clean. Cool and chill. It's a fabulous mix up quick dessert when unexpected guests arrive. It makes its own crust.
