CHILI CON QUESO 
1/2 c. onions
1 sm. can chopped green chilies
2 tbsp. butter
1 lg. (whole) can tomatoes
1 lb. Velveeta cheese

Saute onions for about 10 minutes until golden colored. Drain chilies, tomatoes, and add onion mixture to chilies and tomatoes. Cook about 15 minutes, covered, on medium heat. Cut up cheese in small pieces. Add little by little, until melted. Serve in chafing dish (warm) with tortilla chips, or in fondue pot. This goes over great for parties!
