APPLESAUCE CAKE 
1 c. packed brown sugar
1/2 c. butter
1 egg
1 c. unsweetened applesauce
1 1/4 c. all-purpose flour
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cloves
1/2 tsp. ground nutmeg
1/2 tsp. ground allspice
1/2 c. raisins

1. Lightly grease 8-10 cup baking ring. Beat brown sugar and butter until smooth. Beat in egg. Stir in applesauce. Mix in flour, cinnamon, baking soda, salt, cloves, nutmeg and allspice. Stir in raisins.

2. Pour batter into baking ring. Microwave at medium-high (70%) 4 minutes. Increase power to high (100%). Microwave until wooden pick inserted in center comes out clean, 4-7 minutes. Cool 5 minutes. Invert onto serving plate. Makes 1 ring cake.

Since microwave ovens vary in power, you may need to adjust your cooking time.
