LIME CHIFFON PIE | |
1 (9 inch) baked pie shell or vanilla wafer crust 1 tbsp. unflavored gelatin 1/2 c. water 1/2 c. sugar 1/2 c. lime juice 4 egg yolks Few drops green food coloring 1 tsp. lime zest (peel) 4 egg whites 1/2 c. sugar 1 c. sliced strawberries Lime twists Whole, unhulled strawberries Whipped cream 1. Sprinkle gelatin over water and heat gently until dissolved. Add sugar and dissolve. 2. Mix yolks with lime juice and stir into gelatin mixture carefully. Heat gently stirring, until thickened. Add green coloring. 3. Chill about 20 minutes stirring occasionally. 4. Beat whites until fluffy, add sugar gradually and beat until very stiff. 5. Fold whites into gelatin. 6. Line shell with strawberries and mound filling on top. 7. Cool at least two hours and garnish with whole berries, whipped cream and lime twists. NOTE: Lemon can be substituted for limes. |
