SWEDISH MOLASSES BREAD | |
2 c. scalded milk (or 1 c. milk and 1 c. water) 2 tbsp. shortening 2 tbsp. sugar 1/2 c. molasses 1 tbsp. salt Grated rind of 1 orange 2 envelopes dried yeast Flour Scald the milk then take off fire and add 2 tablespoons shortening, 2 tablespoons sugar, 1/2 cup molasses, 1 tablespoon salt and grated rind; let cool until lukewarm; add 2 envelopes of dried yeast which have been soaked in 1/4 cup warm water. Now add flour until it makes a stiff dough -- flour board and work dough until it is smooth and does not stick to hands or board (about 10 or 15 minutes). Place in greased bowl, butter top of dough and let rise until double in size. Push down and let rise again. Place dough on board and divide into three parts. Work into loaves and put in greased pans; let rise double and bake in oven preheated to 450 degrees for 10 minutes, then bake at 325 degrees for another 25 or 30 minutes. Remove from oven and brush top with butter. Cover with towel until cooled. |
