SHRIMP SCAMPI | |
3 tbsp. butter 2 cloves garlic, minced 2 tsp. dried parsley 1/4 tsp. oregano 1/2 tsp. salt 2 tsp. lemon juice 1 lb. shrimp, cooked and cleaned 2 c. hot, cooked rice Melt butter in a large skillet over low heat. Add garlic, lemon juice, parsley, oregano, and salt; blend. Add shrimp and heat thoroughly. Serve over rice. Parmesan cheese may be sprinkled over the top if desired. |
