MOOSE GOULASCHE 
1 1/2 lbs. moose round
3 tbsp. flour
2 tbsp. butter or fat
1/2 c. onions, chopped
1/2 tsp. salt
1/2 tsp. paprika
1 c. vegetable stock or tomato juice
6 medium potatoes, cut in quarters
1/2 c. carrots, sliced

Cut moose in cubes; roll in flour. Melt butter or fat and saute onions. Remove onions from fat and add salt and paprika. Brown meat in the fat. Add vegetable stock or tomato juice to the meat and simmer 1 1/2 to 2 hours. Add potatoes and carrots for last 1/2 hour of cooking. Yield: 6 servings.
