MASHED POTATO CAKE 
1 lb. Angel Flake coconut
1 tsp. almond extract
1 box powdered sugar
1 c. mashed potatoes (instant or leftover)

Combine the above thoroughly and CHILL. Roll into small balls and place on buttered cookie sheet. Place in freezer.

1/3 bar paraffin wax (Gulf Wax)
2 sq. semi-sweet chocolate
1 bag chocolate chips

Combine the above in a double boiler, stirring constantly. When chocolate is melted and blended thoroughly use 2 forks and dip each ball in the mixture. Place back on buttered cookie sheet.

OPTIONAL: When rolling into small balls place one almond in the center.
