GRATED SWEET POTATO PUDDING 
2 c. milk
1 1/2 c. sugar
Dash salt
1/2 c. butter
2 eggs, beaten
2 tbsp. cornmeal
1 tsp. vanilla
3 lg. sweet potatoes, grated

Mix all ingredients, except sweet potatoes, in large bowl. Hand grate sweet potatoes into mixture to prevent them turning dark; mix well. Turn into 9"x13" glass baking dish. Bake at 325 degrees for 1 hour or until set and slightly brown on top.
