OVEN-FRIED CHICKEN | |
1/4 c. butter 1/4 c. shortening 2 1/2 lb. broiler-fryer chicken, cut into pieces Flour Mixture: 1/2 c. all-purpose flour* 1 tsp. salt 1 tsp. paprika 1/4 tsp. pepper *If using self-rising flour, decrease salt to 1/2 teaspoon. Place flour mixture in paper or plastic bag. Add a few pieces of chicken to bag and shake until well coated; repeat. Heat butter and shortening in oblong pan, 13 x 9-inches, in 425°F oven until melted. Place coated chicken skin sides down in pan. Cook, uncovered, 30 minutes. Turn chicken; cook, uncovered, about 30 minutes longer. |
