EGGPLANT DE-LITE 
1 med. eggplant
1 zucchini
1 lb. ground turkey
1 onion, chopped
1/2 c. celery, chopped
1/2 red or green pepper
2 bay leaves
Pinch of red pepper
Salt and pepper to taste
1/2 c. Italian bread crumbs
2 tbsp. oil

Heat oil. Brown meat, add onions, celery. Cook 15 minutes on medium fire. Peel eggplant and cube. Peel zucchini, slice. Add to meat. Cook 15 minutes. Add all other ingredients except bread crumbs. Salt and pepper to taste. Simmer 30 minutes. Add 1/3 cup water, if needed. Should be very moist. Place in casserole, top with bread crumbs. Bake in microwave 10-12 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
