TURKEY BARLEY SOUP 
1 turkey carcass
2 qts. water
1 1/2 c. chopped onion
2 carrots, chopped
2 pieces celery, chopped
1 can tomatoes, undrained, chopped
1/3 c. barley, washed
2 bay leaves
1/2 tsp. poultry seasoning
Salt and pepper

Place turkey carcass in large, deep kettle. Add water, onion and seasonings. Bring to boil. Cover, simmer for 1 1/2 hours. Remove carcass from soup and scrape meat from bones. Reserve. Add vegetables to soup and simmer 45 minutes until barley is tender. Return meat to soup; heat to serving temperature.
