TURKEY BARLEY SOUP | |
Turkey carcass or 3 turkey wings 9 stalks celery, 1/2 inch slices 1 lb. carrots, 1 inch slices 2 med. diced onions 3 parsnips, 1/2 inch rounds 4 cloves garlic, chopped Handful chopped dill 1 c. chopped parsley 1 tbsp. salt 2 tsp. black pepper 10 qt. water 1 c. barley Place turkey, celery, carrots, onions, parsnips, garlic, dill, parsley, salt, pepper, and water in very large pot over medium heat. Bring to boil, reduce heat and simmer for 3 hours. Skim foam as soup cooks. Cool and shred meat off bones. Return meat to soup, add barley. Simmer for 40 minutes. Barley may be cooked separately. Serves 8. |
