TURKEY BARLEY SOUP 
Turkey carcass or 3 turkey wings
9 stalks celery, 1/2 inch slices
1 lb. carrots, 1 inch slices
2 med. diced onions
3 parsnips, 1/2 inch rounds
4 cloves garlic, chopped
Handful chopped dill
1 c. chopped parsley
1 tbsp. salt
2 tsp. black pepper
10 qt. water
1 c. barley

Place turkey, celery, carrots, onions, parsnips, garlic, dill, parsley, salt, pepper, and water in very large pot over medium heat. Bring to boil, reduce heat and simmer for 3 hours. Skim foam as soup cooks.

Cool and shred meat off bones. Return meat to soup, add barley. Simmer for 40 minutes. Barley may be cooked separately. Serves 8.

I've been making this recipe for years (although this version has less dill) and it's absolutely delicious. Once you start eating it, it's difficult to stop at one bowl.
