CINNAMON ROLLS | |
2 tsp. dry yeast 2/3 c. shortening 2 eggs 1 c. hot mashed potatoes 1 1/2 c. warm water 2/3 c. white sugar 1 tsp. salt 7 - 7 1/2 c. flour Dissolve yeast in water. Add shortening, sugar, eggs and salt. Mix together. Add hot mashed potatoes. Add flour, one cup or so at a time. Add just enough flour to work it into the dough so that it isn't sticky. Knead on a floured surface until smooth. Let rise until doubled. Punch down and divide dough in half. Roll out the dough. Spread with butter. Top with raisins, currants, nuts, cinnamon and brown sugar. If desired add grated lemon peel. The lemon will add a great taste to the rolls. Roll up the dough and cut into rolls. Put in a 9"x13" pan. Let rise again until doubled. Bake at 350 degrees for about 25 to 30 minutes. This recipe will make two pans of rolls. |
