2 c. tomatoes, seeded & chopped 1 c. zucchini, diced 1 c. whole kernel corn 1/3 c. green onions, thinly sliced 1 sm. ripe avocado, peeled & chopped Combine in a large bowl all ingredients. 2 tbsp. vegetable oil 2 tbsp. parsley 1 tbsp. lemon or lime juice 3/4 tsp. garlic salt 1/4 tsp. ground cumin Combine these ingredients in a separate bowl. Mix well and pour over vegetable mixture; mix gently. Chill 3 to 4 hours. Makes 4 to 6 servings, about 4 cups. |
