GRANDMA'S BANANA BREAD | |
2 c. all-purpose flour 1 tsp. baking soda 1 tsp. cream of tartar 1/2 tsp. salt 1/2 c. lightly salted butter, room temperature 3/4 c. sugar 2 lg. eggs 1 c. pecans, chopped 1/2 tsp. grated lemon rind (optional) 1 1/2 c. mashed ripe bananas (about 3 med. bananas) 2 tbsp. hot water 1 tsp. vanilla Preheat oven to 350 degrees. Grease 9 x 5 x 3 inch loaf pan. Mix flour with baking soda, cream of tartar, and salt. In large bowl, beat butter and sugar until smooth and creamy. Add eggs, one at a time, beating well after each addition. Stir in pecans, lemon rind, and mashed bananas. Add flour mixture; 1/2 cup at a time, beating well after each addition. Stir in water and vanilla and pour into prepared pan. Bake 55 to 60 minutes, or until cake tester inserted in center of bread comes out clean. Remove bread from pan and put on wire cake rack. Cool completely. Makes 1 loaf, about 10 servings. |
