FRESH TOMATO SAUCE 
6 shallots, chopped
6 lg. cloves garlic, chopped
12 fresh plum tomatoes, chopped
1/2 c. fresh basil
Salt and pepper
1/2 c. olive oil (about)
Italian sausage, if desired

Saute shallots and garlic in oil until golden brown. Add tomatoes, basil, salt and pepper. Simmer about 1/2 hour to 45 minutes. If adding sausage cook separately, slice and add to sauce. Serve over favorite pasta and sprinkle with Italian grated cheese.
