CHEESE ENCHILADAS 
12 tortillas
2 c. enchilada or taco sauce
5 hard cooked eggs, chopped
1 lg. onion, chopped
1 lb. mild cheese, grated

Heat oven to 450 degrees F. Dip tortillas, one at a time, in the heated sauce to soften them. Place on a plate, then put one tablespoon grated cheese, one tablespoon egg, and onion on top of the cheese. Fold the sides of the tortilla over, forming a roll. Place, seam side down, in an oiled baking pan. Make all of the enchiladas and place in a row in the pan. Pour the sauce over the top and sprinkle with the remaining cheese. Bake ten minutes or until cheese melts and the enchiladas are heated through. Serves six people.
