SUMMER BROWN RICE SALAD 
1 c. brown rice, cooked
2 lg. tomatoes, chopped
1/2 c. sliced green onion
1/2 c. red pepper, chopped
3 tbsp. olive oil
3 tbsp. Balsamic vinegar or cider vinegar
1 tbsp. capers
Lettuce leaves

In 1 1/2-quart bowl combine tomato, green onion, red pepper, oil, vinegar, and capers. Add rice; toss to coat. Season with salt and pepper. Cover and chill several hours. Serve on lettuce. Makes 8 side dishes.
