PARTY COLE SLAW 
1 sm. head green cabbage, chopped
1/2 sm. head red cabbage, chopped
1 lg. onion or 2 med. onions, chopped
3 lg. carrots, shredded or finely chopped
1 med. green pepper, finely chopped
1 1/2 tsp. salt
1/4 tsp. black pepper
1 c. vinegar
1/2 c. water
1/2 c. olive oil or vegetable oil

Make a day ahead and marinate overnight.

1. Combine vegetables in a large salad bowl.

2. Sprinkle with salt and pepper and toss together.

3. Add vinegar, water and oil and toss well.

4. Cover and marinate overnight, tossing occasionally to mix salad with dressing.
