"HOT" CARNE CON CHILI 
3-4 lbs. beef (chuck, round, inexpensive cut of roast, etc.)
1 onion
California chili powder
New Mexico chili powder
Gebhardt's chili powder
Salt
4 serrano chilies, fresh
4 fresh yellow chilies
4 fresh long green chilies
1 clove fresh garlic
1/2 c. water

Meat has to be diced small. Saute in skillet with about 2 tablespoons of cooking oil. Add mashed garlic and onions. Add chili powder and all the chilies after they have been diced. Some people like the seeds added, some don't. Whatever suits your taste.
