COCO-COLA CAKE | |
2 c. sugar 2 c. all-purpose flour 1 tsp. baking soda 1 c. cola-flavored carbonated beverage 3 tbsp. unsweetened cocoa powder 1 c. butter 1/2 c. buttermilk 2 eggs, beaten 1 1/2 c. miniature marshmallows Preheat oven to 350°F. Grease one 9X13 inch baking pan. Sift the flour, sugar and baking soda together. In a saucepan over medium heat, bring one cup of the butter, 3 Tbsp. of the cocoa, and one cup of the cola drink to a boil. Pour into the flour mixture and stir in the marshmallows, buttermilk, and the beaten eggs. Pour the batter into the prepared pan. Bake for 30 to 35 minutes. Remove cake from oven and top with Coco-Cola Icing while cake is still warm. Coco-Cola Icing: 6 tbsp. cola-flavored carbonated beverage 3 tbsp. unsweetened cocoa powder 1/2 c. butter 4 c. confectioners sugar 1 c. chopped walnuts 1 tsp. vanilla extract In a saucepan bring 1/2 cup of the butter, 6 tablespoons of the cola drink and 3 tablespoons of the cocoa to a boil. Remove from heat and stir in the confectioners sugar, chopped walnuts and vanilla. Spread topping over cake while still warm. |
