TORTELLINI SOUP 
1 lb. Italian hot sausage, cut in bite-size pieces, brown in lg. kettle (Or use 1/2 lb. hot & 1/2 lb. mild sausage)
1 c. chopped onions
3 cloves garlic, chopped or pressed
6 c. water
6 cubes beef bouillon (or 3 cubes if using "cooking wine")
1/2 c. dry red wine
2 c. peeled tomatoes (lg. can)
1/2 tsp. basil
1/2 tsp. oregano
8 oz. can tomato sauce
Pinch or 2 of parsley
1-2 carrots, sliced
1 green pepper, chopped
1 1/2 c. sliced zucchini (3 sm.)
1 box tortellini (6-9 oz.)

After browning sausage, drain off fat. Put everything in pot except green peppers, zucchini and tortellini. Simmer 30 minutes. Cook tortellini in boiling water 2 minutes; drain. Add last 3 ingredients and simmer until done, 30 minutes.
