COTTAGE MUFFINS 
1/2 c. plus 1 tsp. flour
1 tsp. baking powder
1/8 tsp. salt
2/3 c. cottage cheese (small curd)
1 egg, beaten
1 tsp. oil
1 tsp. honey
2 tsp. low sugar
Marmalade/jam (16 cal. per 2 tsp.)

Sift dry ingredients together, mix cottage cheese, egg, oil, honey. Stir into dry ingredients until moistened. Put half of batter into 6 pam sprayed muffin cups to each with 1 teaspoon of jam and remaining batter.

Bake at 400 degrees for 15 to 20 minutes.
