DIABETIC APPLE PIE 
1 (12 oz.) can apple juice concentrate, frozen and unsweetened
1 tbsp. cornstarch
4 c. sliced apples (Golden Delicious is best)
1 tsp. cinnamon

Mix cornstarch and apple juice; cook until it begins to clear. Remove and stir in apples until well covered. Pour into unbaked pie shell and top with crust. Bake at 350 degrees for 35-40 minutes.
