GRILLED TROUT WITH ALMONDS 
4 fresh trout
1 lemon, quartered
2 oz. butter
1 oz. flaked almonds
Parsley for garnish

Clean the trout. Place a lemon wedge in the cavity of each. Line the grill tray with buttered foil and carefully lay the fish on it. Smear a little butter on each. Preheat the grill and cook the trout under it for 5 minutes. Turn them very carefully, put a little more butter on top and grill for another 5 minutes. Keep the fish warm on plates while you toss the almonds in the butter in the grill pan and brown them under the grill. Sprinkle them over the fish. Serve with a garnish of lemon slices and parsley.
