POTATO SALAD 
15 lbs. raw potato
2 c. chopped celery
1/2 c. chopped parsley
1 dozen hard cooked eggs
1 1/2 c. sweet pickle relish
2/3 c. prepared mustard
3 c. salad dressing
1 c. chopped onion
Salt & pepper

Boil whole potatoes (new or red) in skins, let cool completely. Peel potatoes and cut up in cubes. Add celery, parsley, eggs (chopped finely), onion, sweet pickle relish, salad dressing or mayonnaise, mustard, salt and pepper and mix thoroughly.
