MONTE CRISTO SANDWICHES WITH
VIDALIAS
 
butter
4 slices Vidalia onions (thick - 1/8 inch)
2 thin slices Swiss cheese
Nutmeg
1 beaten egg
1 tbsp. water

Place onions, Swiss cheese, nutmeg between buttered bread; dip sandwich on both sides into beaten egg mixed with water. Fry sandwich until bread is delicately brown and serve piping hot.

(Ideal for outside grills, or inside for snacks.)

(Vidalias are wonderful for maintaining a low cholesterol level. Contains chemical A1 which lowers blood pressure. It is a no-tears onion and grows in special SE Georgia. They are available fresh or frozen.)
