CHUCK WAGON PEPPER STEAK 
1 chuck steak
1 tsp. salt
2 tbsp. minced onion
2 tsp. thyme
1 tsp. marjoram
1 bay leaf, crushed
1 c. wine vinegar
3 tbsp. lemon juice
1/2 c. salad oil
2 tbsp. cracked pepper

Blend seasonings with vinegar and salad oil in small bowl. Pour over and around meat. Let stand 6 hours turning meat every hour to marinate well. When ready to grill, pound half of the pepper into each side. Grill rack 6 inches above coals. 15 minutes for rare.
