SALMON, MACARONI AND CHEESE | |
2 c. uncooked elbow macaroni 5 tbsp. butter 1/2 c. finely chopped onion 1/2 c. finely chopped carrot 1/2 c. finely chopped celery, thinly sliced 1/4 c. flour 1/2 tsp. salt 1/8 tsp. pepper 1/4 tsp. dry mustard 2 1/2 c. milk 1 1/2 c. shredded Swiss cheese 1 (16 oz.) can salmon, drained and flaked 3 tbsp. butter and 1 1/2 c. soft bread crumbs Cook macaroni - melt 5 tablespoons butter. Saute onion, carrot and celery and stir in flour, salt, pepper and dry mustard. Slowly add milk, stir constantly until thick, add cheese. Mix macaroni and salmon in baking dish and pour on sauce, mix lightly. Combine butter and bread crumbs, sprinkle over top. Bake 25 minutes at 350 degrees. Or Micro - only 5-7. |
