PUFF PANCAKE 
1/2 c. flour
1/2 c. milk
1 tsp. vanilla
Pinch grated nutmeg
2 eggs
4 tablespoons butter

Preheat oven to 425 degrees. Beat together flour, milk, vanilla, nutmeg and eggs; leave batter a little lumpy. Melt butter in oven in 12 inch ovenproof skillet; heat butter until very hot, but do not burn. Pour in batter. Bake about 15 minutes until puffy. Cut in wedges and serve with maple syrup, jam or sprinkled with confectioners sugar. Serves 4.
