POTATO YEAST ROLLS 
Mix together:

1 1/2 c. lukewarm water or potato water
2/3 c. sugar
1 1/2 tsp. salt

Crumble into mixture, 1 package compressed yeast. Stir until dissolved. Then add:

2 eggs
2/3 c. soft shortening

Mix in first with spoon and then with hand:

1 c. lukewarm mashed potatoes
7 to 7 1/2 c. flour

Knead until smooth. Place in refrigerator for about 2 hours before baking. Shape into rolls. Let rise. Bake in 400 degree oven for 12 to 15 minutes.
