PEANUT BUTTER CRISS CROSS
COOKIES
 
1 1/2 c. all purpose flour
1/2 tsp. baking soda
1/2 c. butter or regular stick butter (not spread), room temp.
1 c. chunky peanut butter
1/2 c. packed light brown sugar
1/2 c. granulated sugar
1 lg. eggs
1 tsp. vanilla extract

1. Heat oven to 375 degrees. Have cookie sheet(s) ready.

2. Mix flour and baking soda.

3. Beat butter and peanut butter in a large bowl with electric mixer until creamy. Add sugars and beat until fluffy. Beat in egg and vanilla until well blended. With mixer on low speed gradually add flour mixture. Beat just until blended. Roll heaping teaspoonfuls dough into balls. Place 1 1/2" apart on ungreased cookie sheet. Flatten with fork, making criss cross design.

4. Bake 10 to 12 minutes until browned.

5. Cool on cookie sheet 1 minute before removing to wire rack to cool completely. Makes 60.
