SPRITZ 
1 c. butter
1/2 c. sugar
1 egg yolk
1/2 tsp. almond extract
2 c. sifted all-purpose flour
1/4 tsp. salt

Cream butter; add sugar and cream until well mixed. Add egg yolk and extract. Sift together flour and salt. Add to first mixture and mix thoroughly. Put dough through cookie press onto ungreased cookie sheets in S and O shapes. Use small star disk in press.

Bake in moderate oven (350 degrees) for 8 to 10 minutes or until very lightly browned. Yield: 5 to 6 dozen spritz. NOTE: If necessary, chill dough slightly before shaping.
