FIVE LAYER MEAL | |
1 lb. ground beef 2 tsp. chili powder 2 lg. potatoes 1/3 c. catsup 1/3 c. uncooked lg. grain rice 2/3 c. chopped onion 1 tbsp. shortening 1 lb. can tomatoes 2/3 c. chopped green peppers 1/3 c. water 1 1/2 tsp. salt Place 1 tablespoon shortening in skillet. Add ground beef and onions. Brown. Stir frequently. When meat is brown, add salt, chili powder and black pepper. Cover the bottom of pan in which you will cook with thin slices of potato. Sprinkle uncooked rice evenly over the potatoes. Spread beef mixture on top of the rice. Sprinkle chopped green peppers over the beef mixture. Add the can of tomatoes. Add water to catsup and pour over the mixture. Do not stir! Place lid or foil on pan. cook at 425 degrees in oven until mixture starts to cook, then lower to 350 degrees. Cook about 30 minutes, or until done. (If cut in squares to serve, each layer can be identified.) |
