YIA YIA'S GREEK MEATBALLS | |
4 slices white bread 1 lb. ground beef (may use ground lamb and beef, half and half) 1 egg 1 med. onion, chopped finely 1 tbsp. crushed dried mint 1 tbsp. crushed parsley Salt and pepper to taste Flour 2 tbsp. olive oil Trim crusts from bread. Place in mixing bowl. Cover with small amount of water. Gently squeeze bread to drain excess water. Return bread to bowl. Add meat, egg, onion, mint, parsley, salt and pepper. Mix well with hands. Shape into 2-inch patties. Coat well with flour. Fry patties over high heat in olive oil. Turn once. Drain on paper towels. Serve with pilaf and hot vegetable. These freeze well. Can also be served cold. |
