1/4 c. butter 2 tbsp. water 1/4 tsp. salt 1/2 tsp. peppermint, spearmint or wintergreen extract 3 1/2-3 3/4 c. confectioners' sugar (10X) Food coloring (pink or green), optional Combine butter and water; place over low heat until butter melts. Remove from heat; add salt and extract. Gradually add sugar, blending until desired consistency is reached. Can divide mixture into parts to tint various shades. Work food color in several drops at a time. Knead until smooth. Mold into individual candies or form small rolls and slice. Use candies without storing. Makes about 1 pound of mints. |
