TAMMI'S TOMATO AND BREAD SALAD | |
This is a basic tomato salad recipe that can be used as a base that you can add pepperoni, salami, Mozzarella, black olives, sun dried tomato, fire roasted peppers etc. Which most of those can be purchased from the Dollar store, except the meats. I make this to take to barbecues and it always gets rave reviews! 6 large fresh ripe tomatoes 2 large cloves garlic, minced 1/2 small red onion, sliced thin 1/2 cup fresh basil leaves, torn 1/2 cup olive oil salt and crack black pepper, to taste pinch of red pepper flakes 2 cups day old French bread cubed (or any crusty artisan bread) Parmesan cheese, for sprinkling Chop tomatoes. Add minced garlic, onion and basil leaves. Pour olive oil over tomato mixture and toss. Add salt, pepper and red pepper flakes. Let sit on counter for at least an hour for flavors to develop, toss occasionally. When ready to serve toss with day old French bread, sprinkle Parmesan cheese on top. It makes great use of overripe tomatoes and fresh basil that's abundant at the end of summer. Submitted by: Tammi B. |
