APPLE CHEESE QUICHE 
1 pie shell
3 apples, peeled, cored and sliced thin
1/2 c. brown sugar
2 tsp. cinnamon
1 c. cream
2 lg. eggs
8 oz. Jack cheese, shredded

Preheat oven to 400 degrees. Heap apples into shell. Sprinkle with brown sugar and cinnamon (reserve a little for top). Beat cream and eggs together and pour over apples. Spread cheese on top and sprinkle with brown sugar and cinnamon. Bake 50-60 minutes; let set 10 minutes then serve.
