AUNT LYDIA'S BUTTERMILK PANCAKES 
2 c. flour
3 eggs, separated
2 1/2 c. buttermilk
1 tbsp. sugar
3/4 tsp. baking soda
1 tsp. baking powder
1/8 c. or 2 tbsp. melted butter
1 tsp. salt

Beat egg whites until stiff. Set aside. Dissolve soda in buttermilk; add melted butter and egg yolks. Add all the dry ingredients and mix about 1 minute. Fold in egg whites. Let stand 6 hours or overnight in refrigerator. DO NOT stir before frying.
