BEAN BEEF CHILI ON RICE 
1 lg. onion, chopped
2 cloves garlic, finely chopped
1 tsp. vegetable oil
1 1/4 lbs. ground meat (beef, turkey, etc.)
2 to 3 tbsp. chili powder
1/2 tsp. salt
1/2 tsp. oregano
1/4 tsp. hot red pepper flakes
1 can (8 oz.) tomato sauce
2 c. canned tomatoes with juice
1 to 2 cans (19 oz.) red kidney beans
Rice, cooked
Green onions, sliced

Saute onion and garlic in oil until softened. Add crumbled meat. Cook over high heat, stirring until browned. Add all (except beans, rice, green onions) remaining ingredients. Bring to a boil. Lower heat, simmer covered 30 minutes, stirring occasionally. Strain and rinse beans, reserving 1/3 of the liquid. Add beans to chili with liquid. Heat through. Serve over rice, sprinkle with green onions.
