RIDGE RUNNER STEW | |
1 rabbit, dressed 3 tbsp. shortening 1 onion, finely chopped 1/4 c. chopped celery 2 tbsp. tomato paste 1/2 c. dry white wine 1 tsp. mixed spices 1 clove garlic, minced Salt & pepper to taste 2 tsp. vinegar Disjoin rabbit, brown in shortening in skillet. Add onion, celery, tomato paste, wine and seasonings. Simmer for 1 hour or until tender. Add vinegar; simmer for 5 minutes longer. Yields 4 servings. |
